Ingredients
  

Biscuit Base
  • 200 g digestive biscuits or gluten-free alternative
  • 100 g sugar
  • 2 large eggs
  • 100 g all-purpose flour or whole wheat flour
  • 1 tsp baking powder
Orange Filling
  • 100 ml orange juice freshly squeezed for best flavor
  • 1 zest orange
Topping
  • 100 g dark chocolate or dairy-free chocolate

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
Biscuit Base
  1. In a bowl, mix the sugar, eggs, and zest until light and fluffy. Gradually fold in the flour and baking powder.
Baking
  1. Spoon the mixture into the tray and bake for about 10-12 minutes, or until golden brown. Let them cool completely.
Orange Filling
  1. Combine the orange juice and a little sugar in a saucepan over low heat until it thickens slightly. Allow it to cool.
Assembly
  1. Spread the orange jelly over the cooled biscuit base, then melt the chocolate and drizzle it on top.
Chilling
  1. Place the Jaffa cakes in the fridge to set before serving.
