Method
 

Activate the Yeast
  1. Begin by warming 1 cup of milk until it’s just lukewarm. Pour it into a mixing bowl and sprinkle 2 teaspoons of active dry yeast over the top. Allow it to sit for about 5 minutes, or until it becomes frothy.
Mix the Dry Ingredients
  1. In a separate bowl, whisk together 4 cups of all-purpose flour, ½ cup of granulated sugar, and 1 teaspoon of salt.
Combine Ingredients
  1. Once the yeast is activated, add 2 large eggs, ¼ cup of melted unsalted butter, and 1 teaspoon of vanilla extract to the yeast mixture. Stir well to combine. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Knead the Dough
  1. Transfer the dough onto a floured surface. Knead it for about 5-7 minutes, or until it’s smooth and elastic.
Let the Dough Rise
  1. Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour.
Shape the Malasadas

Heat the Oil
  1. In a deep frying pan, heat about 2 inches of neutral oil to 350°F (175°C).
Fry the Malasadas
  1. Carefully drop a few dough balls into the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side, or until they are golden brown.
Coat in Sugar
  1. While the malasadas are still warm, roll them in a bowl of granulated sugar mixed with a pinch of cinnamon.
