Preparation
- Soak the navy beans overnight in a large bowl of water to soften them.
Cooking
- In a large pot, heat olive oil and sauté chopped onion, carrots, and celery for 5-7 minutes. Add minced garlic and sauté for another minute.
- Add soaked navy beans and vegetable broth to the pot. Season with salt, pepper, and bay leaves. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours.
- Check consistency and adjust with more broth if needed. Remove bay leaves before serving.
- Serve warm, garnished with fresh herbs or a drizzle of olive oil.
