Preparation
- Soak the beans in a large bowl of water overnight or for at least 6-8 hours.
Cooking
- Drain and rinse the beans. In a large pot, heat olive oil and sauté onion, garlic, carrots, and celery for 5-7 minutes. Add soaked beans and broth, season with bay leaves, thyme, salt, and pepper. Bring to a boil, then simmer for 1 to 1.5 hours until beans are tender. Remove bay leaves and mash some beans for creaminess if desired. Serve with parsley or lemon juice.
